Colin O’Neill
Colin O’Neill was born and raised in Southern New England and moved to New Orleans in 1998 to attend Tulane University. He began his local culinary career cooking at Arnaud’s but moved to the front of the house shortly thereafter. After stints at several area restaurants, most notably bartending at Peristyle, he came to Herbsaint in January 2005 and has worked his way up from bartending and waiting tables to overseeing the wine and beverage program and managing. Colin is, as of August 2011, the General Manager of Herbsaint.
